21/2c.all-purpose flour (10 points)
2tsp.baking powder (0 points)
1tsp.baking soda (0 points)
1/2c.applesauce (1/2 point)
1 c. splenda (0 points)
3egg whites (1 point)
1tsp. vanilla (0 points)
4 very ripe bananas-mashed (8 points)


Preheat oven to 350. Spray pan(s) with Pam. Combine
first 4 ingredients and set aside. In larger bowl,
whisk together remainder. Add flour mixture all at
once and stir gently to blend. Pour batter into pan(s)
and bake 50-60 mins. or until knife inserted comes
clean. Cool before slicing.
The whole bread comes out to 29 1/2 points. I think you can get 15 good size slices for 2 points each.

12 muffins
2 points each

2 cups Kellogg's All Bran (or Fiber One)
1 1/2 cups skim milk
1 1/4 cups flour
1/4 cup sugar
1/4 cup apple butter
1/4 cup egg substitute
1 1/2 teaspoons cinnamon
1 tablespoon plus 1 teaspoon baking powder
1/2 cup raisins
1/4 cup finely chopped nuts
Small can crushed pineapple, drained
Combine cereal and milk and let stand 15-20 minutes.
In a separate bowl, combine flour, sugar, cinnamon and baking powder.
Add apple butter and egg substitute to cereal mixture and stir.
Add wet mixture to dry ingredients and mix thoroughly. Fold in raisins, nuts and pineapple.
Bake in 12 sprayed muffin tins at 350 degrees for 15-17 minutes. Both non-stick and traditional tins have worked for me. Just spray!
Let muffins stand in tins for 5-10 minutes before removing to rack to cool completely.
For storage - keep muffins in refrigerator or freeze.

Allbran/apple Muffins (even my teenagers like these)
1 1/4 cup flour
1/2 cup sugar
1 Tbsp Baking Powder
1/4 tsp salt
1 tsp cinnamon
1/2 tsp nutmeg
2 cups Kelloggs Allbran cereal
1 1/4 cup milk
1/2 cup unsweetened applesauce
1 egg
Soak cereal in milk about 5 minutes, add applesauce and egg and mix well.

Add remaining ingredients, stir just until moistened, do not over mix!

Pour into muffin pan sprayed with cooking spray, bake at 400 degrees F. for
20 minutes

Makes 12 good sized muffins, 1.5 points per muffin

(this is the recipe off the side of the box, with the adjustment of 1/2 cup
applesauce for 1/4 cup oil and the cinnamon and nutmeg. I have also added 1
cup finely grated carrot, cut the applesauce to 1/4 cup and served warm with
ff cream cheese. Tastes very much like carrot cake and doesn't change the
point value of the muffin.)

Spice-pumpkin muffins

1 box Spice Cake mix or Carrot Cake mix (I use Carrot)
1 15 oz. can of pumpkin

Mix together. Put into 24 muffin tins. Bake at 350 for about 20-25 minutes.
2 points apiece.
I've read that they have used chocolate devils food cake, yellow
cake, and the Betty Crocker Low fat chocolate fudge cake mix.
