Snacks/Hors d' oeuvres

I love to cook--as many of you know--tonight is chicken fajitas (WW recipe using my own marinade) and this salsa with WOW tortilla chips

I am not gonna figure points on this as its all free ingredients except the tomatoes and onion which at worst calcs to 1/2 per cup

1 can diced tomatoes (The large ones)
1/2 bunch Cilantro
1 Onion
1 teaspoon of minced garlic (you can buy or do yourself--I use garlic powder too)
1 Jalapeno --more (TASTE FIRST) before adding any more
2 teaspoons of hot sauce
Salt--to taste
Pepper--to taste
Combine all ingredients. This is a quick and excellent salsa thats chunky because we are using diced tomatoes--its awesome--i bring it to every party and its very very good for you

EGG ROLLS
Hey! Sorry I never got back to everyone! They actually turned out pretty good. I found the wrappers in the salad section of my grocery store. They have a bunch of those packaged salads, dressings, tofu, egg roll wrappers, etc. in that section.


Anyhow, I mixed cabbage, chopped broccoli, carrots, onions, and chicken together. I steamed that for about 5 min before putting it in the egg roll wrappers. I then filled them up according to the directions on the package. Once I had them rolled, I refrigerated them over night. I wouldn't suggest doing that unless you really are in a time crunch, because the wrappers got pretty sticky. Anyhow, I then quickly fried them in a pan with non-fat cooking spray just to brown them up. I then sprayed them and put them in the oven at 400 degrees for about 20 min, flipping once. They were very tasty--and the only points were the wrappers and the chicken. I think I calculated them to be 1.5 pts each, plus I used some sweet and sour sauce which had points.
I have some frozen, so hopefully, they won't get as sticky as the refrigerated ones!

OVEN FRIES
I love this, only I use a light sprinkle of "Bar-B-Que" seasoning. It is
sold with the spices, and really zings up the oven fries!

:my mom makes them with TexJoy Steak Seasoning

Cut a potato in thin slices (or wedges or whatever you like). Spray a
cookie sheet with Pam and place the potato slices on it. Sprinkle with
salt
and pepper and spray with Pam. Bake at 400 degrees for about 20 minutes
(or
until they look crispy). BAKED FRENCH FRIES!!!!!!!!!! Could life get any
better?????

. Here's my NACHOS!
1 serving of Baked Tostitos (2 pts)
1 oz of Velveeta (oh how I love CHEESE)
2 tbsp of Light Sour Cream
2 tbsp of Chives
Salt & pepper...


I put the tostitos and the velveeta in a bowl and put it in the microwave
for 30 seconds. Then, I put the sour cream on top..then sprinkled it with
chives. MAN it was NUMMY!! And, only 5 pts!! It hit the SPOT!




Bean and Cheese Nachos
The protein in the beans and carbs in the tortilla chips make this a great
energy snack.

1 cup fat-free refried beans
1/2 cup low-fat shredded Monterey Jack cheese
1/4 cup salsa

1. Preheat oven to 350F (175C). Layer tortilla chips on an ovenproof
platter or baking sheet. Spread beans evenly over chips and sprinkle with
cheese. Bake until beans are hot and cheese is melted, about 5 minutes.
2. Top with salsa. Makes about 8 chips per person.

Crispy Sweep Nut Mix
Prepare this snack as a great alternative to popcorn and the perfect
antidote for your sweet tooth. Mix it up with a bit of other Chex cereals
such as rice or corn and other types of dried fruit.

1/3 cup whole, unblanched almonds
3 cups wheat Chex cereal
2 cups mini pretzel twists
1 1/4 cups dried apricots, halved or quartered
Cooking spray
1/2 cup brown sugar
1 tsp ground cinnamon




1. Preheat oven to 350F (175C).


2. In large bowl, stir together almonds, Chex cereal, pretzels and apricots.
Spray with cooking spray and toss.


3. In a small bowl, stir together brown sugar and cinnamon. Sprinkle over
snack mix and toss well.


4. Spread snack mix on a baking sheet and bake for 25 minutes, tossing
occasionally. Cool completely before storing in airtight container.

Spicy BBQ Meatballs


Keep the POINTS down in this popular hors d'oeuvre by making the meatballs
with ground turkey instead of ground beef and using fat-free barbecue sauce.


1 POINT PER SERVING


Prep Time: 15 minutes
Cook Time: 20 minutes

1 1/2 lb (675g) lean ground turkey breast
3/4 cup quick-cooking oats
Whites of 2 eggs
1 large onion, finely chopped
1 clove garlic, chopped, about 1 1/2 tsp
1/4 cup fresh parsley, chopped
1 tsp oregano
1 1/2 tsp beef bouillon granules
1/2 tsp black pepper
1 1/4 cup barbecue sauce


1. Combine all of the ingredients, except the barbecue sauce, in a
medium-size bowl, and mix thoroughly.


2. Coat a baking sheet with cooking spray. Shape the meatball mixture into
sixty 1-inch (x cm) balls, and place the meatballs on the baking sheet.


3. Bake at 350F (175C) for about 25 minutes. Transfer the meatballs to a
chafing dish or Crock-Pot to keep warm.


4. Meanwhile heat barbecue sauce over medium-high heat until hot. Pour the
sauce over the meatballs, toss gently, and serve. Yields 2 meatballs per
serving.

Zucchini Sticks with Honey-Mustard Mayo


These crunchy, crumb-coated sticks taste just as sinful as their fried
cousins. Even better, they boast nutrients and fiber, making them a healthy
snack to boot!

Cook Time: 40 minutes

Zucchini sticks
1/4 cup all-purpose flour
1/4 tsp salt
1/8 tsp ground black pepper
4 zucchini, ends trimmed, cut into 12 x 1-inch (2.5 cm) sticks each
3 egg whites, lightly beaten
1 cup seasoned dry bread crumbs


Honey-Mustard Mayo
1/2 cup fat-free mayonnaise
1 tbsp honey
1 tbsp Dijon mustard




1. Preheat oven to 400F (200C). Coat a large baking sheet with cooking
spray.


2. Combine flour, salt and pepper in a shallow dish. Mix well with a fork to
combine. Add zucchini sticks and turn to coat. Place egg whites and bread
crumbs in separate shallow dishes. Add zucchini to egg whites and turn to
coat. Transfer to bread crumbs and turn to coat.


3. Place coated zucchini on prepared baking sheet and coat with cooking
spray. Bake 40 minutes, until golden brown.


4. Whisk together dip ingredients. Serve zucchini sticks with honey-mustard
mayo on side. Yields about 6 sticks and 1 tablespoon of dip per serving.
